I haven’t been this hot and heavy for a piece of meat in a long time, and let me tell you why. Since giving up factory-farmed meat more than five years ago, it’s a rare treat to sink my teeth into a REAL burger. This mouth-watering sensation is BEYOND organic, grass-fed-grass-finished, and doesn't have any hormones or antibiotics. In fact, several weekends in a row now, I have forced my family to eat lunch with me at this local meat shop so I can get my burger fix. Of course I am talking about Burgundy’s Local – Grass Fed Meat Market and Grill! Haven’t heard about them? Consider yourself educated by the time you read this.
Wendy and Jon Taggart have a fabulous farm in Grandview, about 40 minutes from here, where they’ve been raising cattle, lamb and pigs on beautiful lush Texas pastures. “Here's a picture of our cattle grazing, with our lead steer (the longhorn), Lightning. We've had him since he was a calf! A big boy now, his function is to lead the cattle when we move them to new pastures. Since he grew up on this land, he knows every gate on it and the cattle follow behind! This follows our very important protocol to always handle the cattle in a low-stress way, and Lightning does a wonderful job!" - Taggart
It’s not just a pretty family owned ranch either, Wendy and Jon have the first and only exclusively pastured meats butcher market in the DFW area. You can choose from approximately 45 different cuts offered or they will customize any special cut you desire. And get this, it’s the only place you can buy CHILLED (never frozen) local pasture raised chicken from “The Farm” in Grandview. The Burgundy Boucherie also offers approximately four-six grass-fed lamb cuttings per year, which is the most “seasonal” of their meats.
The best part about all of this? If you don’t live near the new store at 3326 West 7th St., then they will deliver right to your door (10-pound minimum purchase). It’s not just meat they deliver either, how about adding some raw unfiltered honey, raw milk cheese, Himalayan sea salt, ungraded pastured soy-free/GMO-free eggs, or even their homemade beef jerky! Before the Taggart’s opened their Fort Worth location, Jon himself would deliver our meat every other Saturday to our home.
Wendy and Jon are soooo transparent when it comes to their animals and butcher shop, they actually give tours of their ranch. Recent tours were in April and early May, and they will offer two more in the fall. And for all of you aspiring chefs out there, they hold two cooking classes a month at the 7th Street location. Cooking Meats 101- braising, basics and easy recipes will be taught by Wendy this Thursday, May 28 at 6:30PM ($65 a person). Please call for reservations and availability.
