
The Fort Worth Club has named Gloria Starling as its new Director of Operations, according to a release, marking an exciting new chapter for the private club housed in a building that will celebrate its 100th anniversary on Seventh Street next year.
Starling is no stranger to Fort Worth’s fine-dining scene. With over 25 years in hospitality and 12 years as Managing Partner at The Capital Grille’s downtown flagship, she has earned a reputation for elevating service standards and building tight-knit, high-performing teams.
“The Fort Worth Club has long stood as a beacon of tradition, civic leadership, and excellence,” Starling shared on social media. “I’m honored to join an exceptional leadership team as we continue to elevate the member experience with purpose, innovation, and care.”
Born in Mexico City and a resident of Dallas–Fort Worth since 1991, Starling has deep roots in the region and a passion for cultivating environments where people feel valued and welcome. Her expertise in food and beverage management, wine programming, and luxury hospitality fits seamlessly with the Club’s legacy and future vision.
The Capital Grille itself is a story of national pedigree meeting local passion. Founded in 1990 in Providence, Rhode Island, by Ned Grace during a recession, the steakhouse chain steadily expanded, joining Darden Restaurants in 2007 alongside other notable brands, including Olive Garden and Ruth’s Chris. Fort Worth became home to its 46th location in May 2012, opening at 800 Main Street just across from longtime rival Ruth’s Chris. The downtown Capital Grille quickly established itself as the city’s busiest fine-dining steakhouse, renowned for its 18–24-day dry-aged steaks, in-house butchery, and a wine cellar boasting over 350 labels.
In May 2024, The Capital Grille opened a spacious new location in Southlake, featuring a lounge, patio, private dining rooms, and the same upscale menu and extensive wine program that have defined the brand’s success.
As The Fort Worth Club looks ahead to the centennial of its historic home, Starling’s arrival signals a renewed commitment to excellence with a distinctly Texas polish, combining tradition, heart, and forward momentum for a new era in Cowtown hospitality.
