A Dallas chef is heading west to take over culinary operations at one of downtown Fort Worth's newest hotels.
AC Hotel Fort Worth Downtown, which opened at 101 W. Fifth St. near Sundance Square just this past September, has announced Javier Maysonet as its executive chef, who comes to Cowtown after a stint as executive sous chef for Dallas/Addison Marriott Quorum by the Galleria. His other previous credits include W Retreat & Spa, Vieques Island, and El San Juan Hotel in Puerto Rico, where he served as a sous chef.
But now that he's in Fort Worth, he'll be creating a menu that "emphasizes the European soul and Spanish roots of the AC brand," according to the hotel. Guests can enjoy items like breakfast cazuela, empanadas, carnitas pork, and chicken and chorizo paella.

Oquendo, general manager of AC Hotel Fort Worth Downtown, said in a statement. “Chef Maysonet possesses an incredible mixture of experience, culinary skill, and passion. His desire for creating exquisite food combined with an excellent guest experience makes him the perfect fit to deliver on the AC’s promise of being a ‘Perfectly Precise Hotel’ that provides our guests what they need from their dining experience.”
Maysonet will be in charge of the entire hotel's food and beverage functions, including events and galas. Guests can dine in either the AC Kitchen (a European-inspired breakfast spot serving items like croissants, sliced prosciutto and cheese, and tarts) or the AC Lounge (the lobby bar known for its signature cocktails and menu of Spanish-inspired small plates).
