Chef Zurita’s reputation precedes him. Internationally regarded as one of the most influential figures in contemporary Mexican cuisine, he authored the “Diccionario Enciclopédico de Gastronomía Mexicana,” documenting over 4,000 culinary terms and helping Mexican cuisine earn UNESCO World Heritage recognition. His acclaimed restaurants — Azul Condesa, Azul Histórico, Azulísimo, and Litoral — showcase his dedication to preserving traditional flavors while elevating them for modern diners.
Known as “The Anthropologist of Mexican Gastronomy” and affectionately called “Su Majestad” (“His Majesty”), Zurita has taught at culinary institutes across the Americas and Europe and appeared on Netflix’s “Chef’s Table: BBQ” for his mastery of traditional Yucatecan smoke cooking.
