RECIPES: Simple and Hearty Mac n’ Cheese

This one is so simple, even the kids can make it. Having a kids' sleepover? This makes a perfect midnight snack. You could make it a little more elaborate by sautéing about ½ cup of diced onions and stirring them in with the cheese.
1 pound elbow macaroni
10 ounces pasteurized American cheese (Velveeta or similar)
1 cup milk
1 teaspoon salt
1. Bring a large pot of salted water to a rolling boil. Add macaroni and simmer 10 minutes, until tender.
2. While macaroni is cooking, cube cheese and place in a large microwaveable bowl. Add milk and microwave 2 minutes.
3. When macaroni is tender, drain and add to cheese mixture. Sprinkle on salt; stir to melt cheese. Serve immediately or cover and refrigerate. To reheat, add a little more milk and microwave 1 minute; stir and microwave another minute. Repeat until hot.
Tip: For a Southwestern flair, stir in a small can of diced green chilies.
