Being cooped up at home has led to a lot more home cooking for most folks self-isolating right now. Fort Worth Magazine editors Brian Kendall, Scott Nishimura, and Samantha Calimbahin are finding inspiration in their own kitchens as well. Here are a few things they've whipped up as of late.
Brian Kendall: Despite my natural culinary skills (aka, I use a lot of butter and garlic in anything I cook), my busy work schedule lends itself to a healthy diet of Stouffer’s lasagnas and ham sandwiches. Fortunately, my working a mere 10 feet from my kitchen combined with my birthday led me to cook a decent meal for myself. The result: a beautiful broiled ribeye, garlic mashed potatoes, sautéed mushrooms, and asparagus with hollandaise sauce. I had never before attempted to cook three of those menu items. The result: I feel completely competent in my ability to take on Bobby Flay in a 2010 version of "Iron Chef."
Scott Nishimura: I love to cook and bake and am one of the 29 Percenters — the proportion of men who use Pinterest. Here's a recipe for cheddar-stuffed, bacon-wrapped chicken breast I made for the family this week that I pinned awhile ago. I prepped with a scratch barbecue sauce baste and served it with steamed rice, sliced tomatoes, and a five-minute garlic aioli (one third cup mayo; one garlic clove, pressed; one tsp lemon juice; 1/4 tsp salt; and 1/8 tsp black pepper).
Samantha Calimbahin: I'm a bit of a fail when it comes to cooking, but I did hop on the dalgona coffee trend, if that counts. If you've been living under a rock, it's basically a thick, whipped coffee cream dropped atop a cup of cold milk. The recipe I use is super easy — just whisk together 2 tbsp instant coffee, 2 tbsp sugar, and 2 tbsp hot water. Since I don't have an electric hand mixer, I whisk it all by hand. Took me 20 minutes the first time, but I discovered the hotter the water, the easier the mixture thickens, and now it only takes me 10 minutes. When it's all whipped up, I add 2 tbsp of cocoa powder to turn it into chocolate dalgona coffee. *chef's kiss*
