Goldee's Bar-B-Q
The top barbecue joint in North Texas will soon reveal some of the secrets of its culinary success.
This fall, the owners of Goldee’s Bar-B-Q will release their first cookbook, called, appropriately enough, Goldee's Bar-B-Q: A Cookbook. The book will come out in October and is being released by the University of Texas Press, according to a press release.
Goldee’s owners Jalen Heard, Lane Milne and Jonny White are all listed as authors, while James Beard Award-winning writer Lisa Fain is credited as a contributor. Fain’s the Dallas-based writer behind the popular Homesick Texan blog, and she has also written three books of her own: The Homesick Texan Cookbook, The Homesick Texan’s Family Table and Queso: Regional Recipes for the World’s Favorite Chile-Cheese Dip.
According to the release, the book will unveil some of the recipes that catapulted the restaurant to the No. 1 spot on Texas Monthly’s coveted Top 50 BBQ Joints list four years ago. On the mag’s latest list, announced May 27, Goldee’s barely budged, moving just two spots down to No. 3.
In addition to showcasing signature recipes, the 256-page book will offer practical tips and techniques for anyone looking to elevate their backyard barbecue game. Several chapters will cover the best methods for smoking, trimming and seasoning various meats, from selecting ideal cuts and seasonings to figuring out the best temperatures to use during the smoking process.
Between the recipes and tips are stories that trace how the restaurant’s founders — longtime friends Jalen Heard, Jonny White, Lane Milne, Nupohn Inthanousay, and Dylan Taylor — decided to open a barbecue joint, and how the old Kenneth’s Pit Barbecue building, tucked down a remote country road near Kennedale, became home to Goldee’s.
Named after the old Ford F-250 the owners used to pull around their first pit, Goldee’s opened in February 2020, on the eve of the COVID-19 pandemic. Though many restaurants fell during COVID, Goldee’s managed to stay afloat, focusing on to-go meals. In 2021, Texas Monthly named the restaurant the best ‘cue joint in the state, a monumental honor that vaulted the restaurant and its owners into barbecue stardom.
The Goldee’s cookbook will share shelf space with two other local ‘cue cookbooks - Brandon Hurtado’s Barbacoa: The Heart of Tex-Mex Barbecue and Patrick “Jube” Joubert’s Making You Smile With Smoke.
Goldee's Bar-B-Q: A Cookbook is slated to drop Oct. 21.
