The menu at The Burroughs Kitchen is a mash-up of both East Coast and Southern comfort foods.
Southern and East Coast soul foods will collide in the new restaurant by Gary Brindle and Clarence "Gauge" Xavier.
They’re aiming to open The Burroughs Kitchen in early October. The newly constructed space at 1007 South Main St., No. 153 is in the same building that already houses Four Sister's - A Taste of Vietnam.
“We’d like to bring a restaurant to the neighborhood that is a safe place for our customers. Our vision is conversation over cell phones, and a chance to rediscover homemade food,” Xavier says.
The restaurant’s name has a dual meaning for its owners. Gary hails from New York City, and he brings a taste of the five outlying boroughs and their East Coast comfort food. Gauge's great grandmother, on the other hand, Mable Burroughs-Williams, was a Fort Worth restaurateur who specialized in Southern soul food.
The menu is a mash-up of both East Coast and Southern comfort foods. They call it "cosmopolitan soul," and chances are it will stir memories for many patrons, no matter where they grew up.
The eclectic blend includes everything from Martin House beef tips and Buffalo-style chicken and waffles, to baked cod, fried catfish, or lobster rolls. A smorgasbord of side dishes will range from collard greens and mashed potatoes to New England mac and cheese and black-eyed peas.
The design will be eclectic as well, featuring industrial and traditional elements. “We are using recycled material, including our light fixtures,” Xavier says. The restaurant even has a back patio, with cloth awnings to seat 30 more people.
The Burroughs Kitchen will also be serving up a fully-loaded rotating buffet, they call “Church House Brunch” complete with gospel music on from 11 a.m. to 5 p.m. Sunday. Check them out at theburroughskitchen.com.
