Passover is here and, amidst all of the hustle and bustle of life, you want to create good memories for your family. Jude Sloter shares with us a fabulous, chocolaty delight that has become a cherished tradition for her three children during Passover. Daughters, Mollie, 8, and Caroline, 5, help sprinkle on the toppings, and the whole family helps arrange these sweet matzos on a special plate.
Chocolate Covered Matzo
Yield: 12 large matzo treats
Ingredients:
1/2 pound matzos
1/2 pound butter
1 cup brown sugar
8 ounces chocolate chips: semi-sweet, milk, white, peanut butter or butterscotch
Toppings: nuts, sprinkles, chocolate chips
Directions:
Preheat oven to 350°.
Line a cookie sheet with foil and place matzos on sheet, breaking if necessary to fill cookie sheet.
In a small saucepan over low heat, melt butter and brown sugar, simmering 1 to 2 minutes or until mixture coats the back of a spoon.
Brush matzos with brown sugar mixture.
Bake 3 to 4 minutes until glaze begins to bubble (watch carefully to keep from burning).
Remove from oven and top with chocolate chips; return to oven until chips begin to melt.
Remove from oven and spread chocolate to cover matzo.
Sprinkle with nuts or other toppings.
Freeze until hard.
Break into pieces to serve.
