Fort Worth has no shortage of smoked meat, and even the chef behind Trio New American Cuisine in North Richland Hills is joining the club — but with a little more Asian flair.
Jason Harper, known for his globally-inspired menu at Trio New American, has been playing with Asian ingredients and flavors at his restaurant for the past 10 years. He’s recently introduced a new food trailer, Kunsei Smokehouse Trailer — pronounced “koon-say,” which means “smoked” in Japanese.
Kunsei’s first stop will be at Rahr & Sons Brewing on July 10. Then, the trailer will be at the Fourth Friday Wine Tasting at Classic Wine Storage of Fort Worth on July 26.
Expect a small but creative menu that will be available until sell-out. Plates will consist of char siu pork ribs, lemongrass sausage, Kunsei brisket, tea-smoked chicken and a Vietnamese smoked brisket banh mi. There will also be Texas-inspired sides like kimchi coleslaw, miso creamed corn and drunken dashi beans; and for dessert, there's Chinese five-spice blackberry cobbler with Saigon cinnamon ice cream.
Harper says his Kunsei concept is Tex/Asian but not to be confused with Korean barbecue, which features mostly marinated and grilled meats.
"In Texas, we smoke," he says. "It's Texas barbecue with a lot of Asian flavors."
