Tomahawk steak with wild mushrooms from Wicked Butcher.
The Sinclair Hotel at 512 Main Street is one of the most stunning historical structures in Fort Worth. This Marriot Autograph Collection property features 164 rooms as well as one of the city’s only rooftop bars. Besides being a high-end boutique style hotel, The Sinclair is also home to the popular chef-driven restaurant Wicked Butcher.
This modern steakhouse, from DRG Concepts, was just given the distinction of being the No. 1 spot for Food & Beverage out of over 150 Marriott Autograph Collection properties that span the U.S. and Canada.
This means Wicked Butcher beat out restaurants that reside inside the likes of the famed Lexington Hotel in New York City, as well as The Cosmopolitan of Las Vegas, in Nevada, and the Arrowhead Springs Hotel and Spa in Lake Arrowhead, California to name a few.
Since DRG owns and operates such restaurants as Chop House Burger and Wild Salsa, it’s a gimme that this brand knows its food service. From the get-go, Wicked Butcher was placed in the very capable hands of chefs Luigi Iannuario, Richard Triptow, and Austin Carlson. These names are the ones that make sure the food and beverage service at Wicked Butcher is on point at all times.
According to DRG Concepts CEO Nafees Alam, consistent service for every guest is the only way to receive such an accolade.

“Basically, our goal is to impact each and every guest because we don't really know who's a hotel guest or who's a regular guest that just comes in,” Alam says. “So, you have to take care of every single guest the same way, so when people leave, they want to keep coming back to the hotel and to our restaurant.”
The metrics behind this ranking are gathered via a survey that is sent out to hotel guests 24 hours after their stay. These surveys cover things like hotel amenities, along with food and beverage service and quality.
The Autograph Collection itself rests underneath high-end Marriott flagship hotels like the St. Regis. Instead, places like The Sinclair are considered more of a “hyper localized boutique hotel,” under the umbrella of a Marriot Autograph Collection.
Wicked Butcher has wowed foodies since it opened in January of 2020 with dinner menu items that include such offerings as Center Cut Filet Mignon, Hokkaido A5 Wagyu, and Beef Wellington. Plus, Wicked Butcher’s raw bar serves the best the sea has to offer, from caviar to crab.
Wicked Butcher might be riding high on the mountain top now, but the kudos this eatery just received could all be gone next quarter. Since this top mark is re-evaluated every three months, Alam says the restaurant’s team is ready to keep this distinction in Cowtown.
“It's always good to hear that whatever work everybody's putting in, it's doing something good,” Alam says. “It feels great to be recognized. I think the team in Fort Worth does an amazing job. And it’s always great to hear that the work that we put in has been recognized at some level.”
