Opening day is less than two weeks away for Colleyville's newest restaurant, one marked by regionally inspired, upscale-esque fare served in a comfortable atmosphere.
Stone House will open Sept. 28 at 5201 Colleyville Blvd., an American restaurant run by a couple Del Frisco's alums — former regional manager Greg Kalina and former vice president of culinary Thomas Dritsas — and partners Paul and Lisa Pardo.
The menu takes inspiration from the South and West regions of the U.S. — things like shrimp and grits, steaks, and shareables like blue crab empanadas and red chili shrimp — while the atmosphere is reminiscent of the California Wine Country, with a lounge, fire pits, and herb and tomato gardens.
But unlike Del Frisco's, Stone House will carry a more approachable vibe, with smaller portions and prices that don't go above $40.
"One of the things we never want to hear is 'pretentious,'" Kalina says. "There's some polish now; you have little pops of luxury ... so it would be an approachable restaurant with elegant touches."
When the restaurant opens, safety protocols will also be in place due to the COVID-19 pandemic, like a mask requirement, the use of disposable menus, and sanitizing stations throughout the space. In a time when the restaurant industry is struggling due to reduced capacities and closures, Kalina says he's confident about what the future holds for Stone House.
"When you start checking off the boxes of an incredible piece of real estate, a very good congruent group of partners, and a culinarian like Thomas — yeah, I just can't pass it up," Kalina says.
