The Sausage Shoppe
The east side of Fort Worth is now home to one of Fort Worth’s longest-running barbecue joints.
Sausage Shoppe, which has been in business for nearly three decades, has moved into a new location at 6513 Brentwood Stair Road.
Local barbecue aficionados should recognize that address: The tiny brick building was once home to Wilson’s BBQ, possibly the city’s one and only 24-hour barbecue spot. More recently, it housed Big Boyz BBQ, which made a name for itself with stellar smoked chicken salad.
Outfitted with a drive-thru window, the store caters mainly to to-go orders, although there is a small dining area inside.
Sausage Shoppe is well-known for its namesake dish, made by hand daily in pork, beef and a blend of the two. Owner Alandres Chambers is tight-lipped about the recipes, which were developed by his parents, Ivy and Mary Chambers, who opened the original store on East Seminary nearly 30 years ago.
Over the years, Sausage Shoppe has bounced from one locale to another. Its last location, at 3329 Alta Mesa Blvd., is now occupied by R&R Soul Food, which Fort Worth Magazine featured in its January issue.
After closing the Alta Mesa store, Chambers thought about getting out of the restaurant business – a thought that lasted, he says, oh, about a day.
“I thought I was going to retire,” he says. “But retirement’s not for me, at least not yet. We closed the Alta Mesa store on a Friday and began to open on Brentwood Stair the following Monday. How’s that for retirement?”
While past iterations of Sausage Shoppe have offered large menus of barbecue, soul food and Americana dishes, the menu at the new store focuses solely on barbecue. In addition to sausage, there’s brisket, pork ribs, smoked bologna, chicken, and sides such as corn, green beans, and mac and cheese.
“That’s what the menu was like when my parents opened it,” Alandres Chambers says. “I wanted to get back to those roots and doing what we do best.”
