Unless you've been living under a rock these past few months (oh wait, we're in a pandemic — ha), you should know birria tacos are all the rage in Fort Worth right now. They're essentially grilled beef and cheese-stuffed tacos, made to be dipped in consummé, a soup. Birrieria y Taqueria Cortez, La Antojeria Jalisco, and Tres Betos Taqueria are just a few of the places where you can find this delicacy — assuming you don't get tuckered out waiting in line for so long.
Well, now Near Southside gastropub The Bearded Lady is in on the trend, basically taking the birria taco and turning it into a grilled cheese. Yes. A grilled cheese.
Dubbed “The Birria Lady," the sandwich is marinated beef chuck, grilled onion, Oaxaca cheese, and cilantro, smothered and cooked in its own consummé, then served with a cup of more consummé for dipping.
It's the grilled cheese of the month, so it won't be on the menu forever, but the folks at The Bearded Lady seem pretty jazzed about it, writing in a Facebook post: "These are going to fly, so make sure you get one because we can honestly say this is our favorite grilled cheese we have ever done. Like, ever."
