Dayne’s Craft BBQ
Over the past year, Dayne’s Craft BBQ has made a name for itself as one of Fort Worth’s top barbecue spots.
But to enjoy Dayne and Ashley Weaver’s smoked meats — such as their signature bacon brisket — and creative sides, you gotta jump through one hoop: They’re only open on Saturdays.
That’s about to change. Starting Feb. 26, Dayne’s will be more than just a once-a-week pop-up. They’ll be open Friday, Saturday, and Sunday from 11 a.m. to 4 p.m., or until the food sells out.
Last year, the couple purchased a food trailer, giving them more legroom to cook and serve. The trailer is parked at Lola’s Saloon, where they’ve hosted their Saturday pop-ups.
“The trailer was a tremendous step forward for us,” says Ashley. “It’s allowed us to push out a lot more food.” Pitmaster Dayne is still using a relatively small 500-gallon smoker, but Ashley says the couple recently made a down payment on a 1,000-gallon smoker, which should arrive by late summer.
For now, most of Dayne’s menu will be available on Friday and Sunday, except for pulled pork, bacon brisket, and desserts. But those items may be added to the Friday and Sunday menus in the coming weeks. “Once we feel confident that our business will support it, we’re going to have our full menu available all three days,” Ashley says.
Dayne began to make a name for himself as a skilled ‘cue aficionado in the summer of 2018, when he started selling barbecue out of his backyard, right off the smoker. Pop-ups at local breweries came next, then the weekly pop-ups at Lola’s.
Dayne’s now plays an integral role in Fort Worth’s thriving craft barbecue scene. Last year, the couple scored back-to-back kudos from Texas Monthly’s “BBQ Snob” Daniel Vaughn, first for their signature bacon brisket and housemade sausages and then for their "Fort Worth the Wait” sampler.
Later this year, as, hopefully, the pandemic begins to subside, the couple is hoping to expand into late-night dining via a “Midnight Munchies” menu, aimed at Lola’s late-night crowd. If you visit Dayne’s on Sundays, you may get a sneak preview.
“Sundays are going to be test kitchen day for Midnight Munchies,” says Ashley. “We’re going to try and feature one item a week that will potentially be on the menu.” Ashley says possible menu items include loaded brisket fries, giant baked potatoes, and garlic-Havarti burgers.
