Tenderloin and Goat Cheese Tartlets
ingredients:
3 to 4 ounces goat cheese
1 tablespoon chopped, fresh chives
6 prepared tartlet shells*
4 ounces thin sliced grilled or sautéed beef tenderloin
6 to 12 sprigs fresh chives
1 1/2 to 2 teaspoons balsamic vinegar
directions:
Blend goat cheese and chopped chives. Fill tartlet shells with goat cheese mixture. Top each with slices of beef tenderloin. Drizzle each with approximately 1/2 teaspoon balsamic vinegar. Garnish with chopped chives.
Smoked Salmon Tartlets
ingredients:
6 prepared tartlet shells*
3 to 4 ounces cream cheese
4 ounces sliced, prepared smoked salmon
2 tablespoons capers
3 sprigs fresh dill
directions:
Fill tartlet shells with cream cheese. Roll salmon slices and prop on top of cream cheese. Arrange 2 to 3 capers on top of salmon and garnish with dill.
Bleu Cheese and Sweet Onion Marmalade Tartlets
ingredients:
6 prepared tartlet shells*
4 ounces bleu cheese crumbles
2 tablespoons prepared sweet onion marmalade*
directions:
Fill tartlet shells with bleu cheese. Top each with generous teaspoon onion marmalade
