Dallas-based DRG Concepts announced Wednesday the addition of Wicked Butcher, a steakhouse that embraces the swanky, art deco character of the revived Sinclair Building − one of Fort Worth's historic landmark buildings.
At the helm will be Chef Luigi Iannuario, an Italian native and expert in the world’s great beef traditions. He’s fluent in Italian, Spanish, and French cuisines. Chef Richard Triptow, who has led programs at The Rosewood Mansion on Turtle Creek, Lakewood Country Club, The Mandalay Four Seasons, and the prestigious Pine Creek Cookhouse in Aspen is also on the culinary team. Finally, Chef Austin Carlson, with a resume that includes acclaimed European restaurants as well as Nonna Restaurant in Dallas, will round out an all-star kitchen.
“With a menu and setting to engage and enchant locals and international visitors … our entire team is so inspired by the authentic, beautiful Sinclair Hotel building in the infinitely appealing center of Downtown Fort Worth," says Nafees Alam, CEO of DRG Concepts.
The setting will incorporate bright, glossy white brick and tile, complemented with emerald colors, brass fixtures, natural woods, and marble.
Wicked Butcher will utilize a Himalayan salt dry-aging method for its beef. They will also serve chops, poultry, and game alongside a seafood selection and a raw bar sourced from local and global waters. The fresh seafood menu will include hand-rolled sushi, oysters, crab, lobster, and swordfish.
A full bar will be atop the Sinclair Building at 512 Main St., 17 floors above the cityscape below in an open concept rooftop space. Wicked Butcher will open in fall 2019.
DRG Concepts also has Wild Salsa and Chop House Burger in City Place on Throckmorton Street in downtown Fort Worth. Eateries in Dallas include Dallas Fish Market and Dallas Chop House brands, along with the original locations for Wild Salsa and Chop House Burger.
