For several months now, plenty Fort Worthians along with a few publications have relayed the rumor that “Yellowstone” creator Taylor Sheridan wants to buy one of Cowtown’s most iconic spots — Joe T. Garcia’s. Although these rumors have not been confirmed, we acquiesce where there’s smoke, there’s most likely a giant plate of fajitas.
Sure, there’s no definitive answer yet, but we thought we’d take a stab at what we thought Joe T.’s would be look like in the event Sheridan did take over. Just to be clear, this is totally our take on what we think Joe T.’s would look like in an alternate universe, purely for fun.
Menu
For starters, we think Sheridan would be inspired to expand Joe T.’s menu. After all, Sheridan has the entire Four Sixes Ranch from which to cull beef. It would be hard to promote his steak brand ‘Four Sixes Ranch Reserve’ one fajita plate (although huge) at a time. Also, we expect that he would tie in his “Bosque Ranch Coffee” either for brunch, dessert, or all day. I mean, he’s been quoted several times on how he feels about the dark bean juice many of us can’t start our mornings without.
“Meals will be missed, and supper worked right through. But the one thing as essential to the cowboy as his boots and saddle is coffee. It is our fuel,” he stated in a product release.
Also, in his arsenal of culinary aces, is part-time “Yellowstone” actor and full-time chef, Gabriel “Gator” Guilbeau, who made a name for himself catering on the set of “Yellowstone”. Last fall, Guilbeau released, “Yellowstone: The Official Dutton Ranch Family Cookbook,” which features the food he served on the show as well as for the cast. Sheridan might find a tie-in, recipe-wise, to add to Joe T.’s already iconic two plate menu, however the thought does send shivers down the spine.
Décor
Next up could be a change in this Cowtown eatery's ambiance. After all, Sheridan did use Fort Worth local Sally Brumbaugh, from Brumbaugh’s Fine Home Furnishings, to help revamp the interior of the Four Sixes Ranch last year. Joe T.'s could be host to some tasteful Texas chic, along with its established décor of Spanish tiles and archways. I’m sure the duo could work something stylish out devoid of anything tacky. Possibly some new tables and chairs with a few Western-style paintings on the wall for good measure.

The courtyard, which in our humble opinion is already close to perfect and one of the many reasons to visit Joe T.'s, just might have a few western items added to it in the form of iconic movie and television show props from Sheridan’s various projects. This idea could even take on more of a meta definition if Sheridan was to use this Fort Worth oasis as the backdrop for one of his movies or shows. Then visitors could check out where such and such a scene was shot.
Final Touches
Keeping this scenario going, Sheridan could host a grand re-opening of this iconic restaurant, which originally opened in 1935. As many might imagine, this would be a red-carpet event filled with former and current Sheridan-verse stars and actors, which would not be a first for this establishment. Images of Billy Bob Thornton shaking hands with Benicio del Toro while posing for pictures come to mind. Sheridan may also post a “Yellowstone” gift shop filled with autographs and filming memorabilia from his already storied career.
Yes, a Sheridan-filled Joe T.’s might happen ... or it might not. The reality of this scenario is the fact that Joe T.’s really doesn’t need anything added or taken away. It’s a turnkey business that already has an established global fanbase. Our advice to Sheridan and investors if he does decide to purchase this spot, is to leave it alone. It’s already in the right spot and has the perfect ambiance derivative of our city. Next time you read about or hear this rumor just think what might come to be if it happens.
