The Dusty Biscuit Beignet Bar
The Dusty Biscuit Beignet Bar plans to set up shop at 105 S. Main St. starting Jan. 7, slinging sweet and savory beignets out of an Airstream known as “Fork Worth,” managed by food business incubator Locavore.
Beignets aren’t exactly as easy to come by in Funkytown as they are in The Big Easy. But for those hanging around the South Main district, that fried gold and cafe au lait will soon be within reach.
The Dusty Biscuit Beignet Bar plans to set up shop at 105 S. Main St. starting Jan. 7, slinging sweet and savory beignets out of an Airstream known as “Fork Worth,” managed by food business incubator Locavore. The trailer will serve breakfast and lunch — a menu that includes signature offerings like the French Quarter (a classic beignet topped with powdered sugar) and Everything Beignet-gal (an everything bagel-inspired option); beignet sliders like the Dusty Cristo, Cajun Chicken Salad, and Bayou Boudin; and chicken and sausage gumbo.
The Dusty Biscuit has been building its following through pop-up events at coffee shops and breweries, recently appearing at Martin House Brewing Company and HopFusion AleWorks. The next pop-ups are scheduled for Saturday at Craftwork Coffee Co.’s Foundry District location and Dec. 21 at CRUDE Craft Coffee Bar. According to head beignet bartender Trey Smith, pop-up and catering events will continue when the Airstream opens.
Come January, The Dusty Biscuit will operate out of the Airstream from Tuesday through Saturday, 7:30 a.m. to 1:30 p.m., though dates and times are flexible and could expand due to demand, according to Smith.
As far as a future brick-and-mortar, Smith wrote in an email to Fort Worth Magazine that he’s open to the idea, though he’d also like to explore alternate options like franchising or serving out of a coffee shop or local restaurant.
“I joke often that we have a plan for world beignet domination,” he wrote. “No matter where we end up, we're gonna kick up some dust.”
