RECIPES: Baked Crispy Chicken Thighs
Using bone-in, skin-on chicken thighs provides extra insurance against dryness in this easy, oven-baked crispy chicken thigh recipe.

When you bake skin-on, bone-in chicken thighs in the oven, the skin crisps up beautifully, holding in all of the flavorful juiciness of that rich, tender dark meat. It’s pure, roasted chicken thigh magic and requires almost no skill. In fact, cooking crispy chicken thighs in the oven is a much easier skill to perfect cooking than chicken breasts, because thighs—especially if they’re skin-on—have more fat and therefore are less inclined to dry out.
Ingredients:
- 2 ½ - 3 lbs. chicken thighs (bone-in)
- 1 ½ - 2 tsp salt
- 2 tsp onion powder
- ½ tsp dried thyme or oregano
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp cayenne pepper
- ½ tsp bouillon powder or poultry seasoning
Instructions:
- Preheat oven to 475 degrees
- Combine spices into bowl
- Sprinkle generous amount of spices on both sides of chicken
- Place chicken on foil lined cookie sheet
- Bake chicken for 20 mins on 475 degrees
- Drop oven to 400 degrees and bake until skin is crispy, thighs are no longer pink, juices run clear, and internal temperature is about 165 degrees (about 30 mins)
- Serve
