Got your attention, huh? Well, let me assure you: This week's blog isn't as salacious as it sounds. (But still quite an arresting title, I agree!)
The “naked meal” I'm referring to in this case is salmon. Yes, salmon! And when you procure a piece that's fresh and of excellent quality, all it takes to transform it into a delicious dish is a sprinkling of sea salt, a quick flip-flop in a lightly olive-oiled pan and — voila! — you've got yourself some seriously sublime eating.
And at just $6.99 a pound, Costco sells some of the best salmon out there. Fresh and flavorful, it rivals any fine-restaurant fare — at a fraction of the price. And like I mentioned earlier, less truly is more here, folks. There's zero need to doctor it up. In fact, the mark of a good piece of salmon is that it can stand on its own. (Read: No need to mask any off-putting tang with heavy-tasting sauces or heavy-handed spices.) For dinner this weekend, we paired our dressed-down salmon with a generous serving of cheese-filled tortellini (also from Costco and handily available in an adjacent aisle). So simple and so satisfying, it's a meal that really hits the spot!
For what it's worth, besides tasting terrific (my kids, in fact, have always tended to like salmon a lot), salmon is also great for your gray matter. Research shows it plays an important role in mood regulation, which in layman's terms means it helps keep your noggin sharp and happy. (I remember as a kid being told to eat my salmon — “it's brain food.” Now I know why.) While that's unquestionably because it's rich in mind-nurturing omega-3 fatty acids (also good for your heart too, by the way), I'm fairly certain that enjoying such a yummy food with your favorite tablemates just puts you in a really good mood. And, lucky for me, I had both this weekend: good company and good cuisine.
